T + 48 HOURS....

Hi there!  We havent chatted for a while...sorry about that!  Well, here I am...to bug you again :).

In 48 hours I will be giving up Facebook for a month to spend time connecting with PEOPLE instead of in computer land. For some reason when I'm on Facebook even my 'real life' friends seem distant.  SO---instead of facebooking I will spend time WITH friends, coloring and reading with my kids, thinking of ways to bless my husband, sketching, gardening, sewing, journaling, or maybe a mixture of all of the above.

I'll share with you some of my journey here!  Meantime, check this out!!

What do you think??  I'd love to hear your input!

I'm pretty sure I owe you 2 recipes.....lets make it G-OO-D!!!

I promised you that I would post at least once a month...last month we had our sweet little baby boy and he was in and out of the hospital.  Since then I've been in baby la la land :).  :::swoon:::  We've been waiting for soooo long for this little blessing and we are LOVIN IT!
Sooo....on with the recipe?  Lets GO!

I got this recipe from an old friend and I dont think I even looked at it....I always assumed that since its "Lobster Bisque" that it would be too hard or too much work.  BOY --- I WAS WRONG.  Try it for yourself, you wont be sorry!  Guess what?!  Just in time for Valentines day!  I got my lobster at Safeway after watching for a deal.  I scored 2 tails for just over $7 (it was originally $23)---and extra money off at the register for getting to $50.  So...just because its lobster doesnt mean it 'has' to be super expensive.

LOBSTER BISQUE (serves 4)

1/2 cup butter, unsalted (if you only have salted you can probably skip the salt later)
1 medium onion, roughly chopped
1 large carrot, roughly chopped

2 inside stalks of celery hearts OR inside stalk from celery, roughly chopped
1 teaspoon parsley, or 3 tablespoons minced fresh
1 teaspoon thyme, or 3 tablespoons minced fresh
1 bay leaf
3-4 tablespoons flour (depending on how thick you want it)
2 uncooked lobster tails in shells
1/4 cup white cooking wine
1/4 cup sherry cooking wine
6 cups vegetable stock (fish stock if you want a more robust fish flavor) + 1 t fish sauce
1 heaping tablespoon tomato paste
1 cup cream
salt and pepper to taste

In a stock pot melt butter over medium heat.  Saute the aromatics (onion, celery, carrot) and lobster tails with a dash of pepper for about 4 minutes.  Add stock and spices, simmer on low for about 35 minutes.  Remove lobster tails, cut into large chunks, set aside.  Liquify the remaining ingredients in the stock pot.  If you have an immersion blender, I'd suggest using that.  If not puree in blender in SMALL batches (otherwise, it WILL explode your hot yumminess EVERYWHERE----believe me this is why I got an immersion blender :) ).

Pop the remaining 1/4 cup butter in the microwave for 15 seconds....make a paste with the butter and flour, then add it to the stock to make a roux.  Add lobster and cream and simmer, stirring frequently, for about 10 minutes.  Great served with a crusty bread and salad.  For aesthetic purposes, you can garnish with a piece of shrimp or fresh herbs (I dont have fresh so I used dry).

APPLE PIE MOONSHINE
This is a popular mixed drink in the south, and can be purchased at a local liquor store.  However, it is nowhere as tasty as homemade.  Additionally---its a LOT cheaper to make (by ounce).  LET IT BE SAID (in case you are cringing) I do not drink...IF I have a beer, I'll have 3 sips and I'm done.  I like virgin drinks because I hate the taste of alcohol.  This is an exception, I'll actually drink a glass.

3/4 cup raw sugar
3/4 cup brown sugar
3 cinnamon sticks
1/2 750 ml bottle of Everclear
2 quarts Apple Juice
2 quarts Apple Cider
mason jars

Pour cider and apple juice with sugars and cinnamon sticks in stock pot.  Bring to a boil, stirring to make sure all the sugar is dissolved.  Cool.  Add Everclear.  Put into mason jars or drink right away.  For a true 'moonshine' let it sit in the mason jars in a cool place for 30 days.  This is great warm :).

Catching up on the goods....

I've been cooking from time to time and taking pictures.  So here is a compiling of our recent concoctions.   :)

A lot of them are sweets, because we like sweets a lot!  We are on the meals ministry at church so we havent been making too many dinners lately.  Although with our food restrictions they are 'whole food' sweets. :)

Buttermilk Pancakes:

We have a hard time eating pancakes out of a box unless we are paying way more than I'd like to pay for them.  So----we make them from scratch! :0)  They are MUCH tastier that way anywho!
Mix the following:
1 cup flour
1 teaspoon salt
1 teaspoon baking soda
Then add:
1 well beaten egg
1 1/8 c buttermilk (I dont keep buttermilk on hand. Trick: 1 Tablespoon white vinegar or lemon juice let it sour for 5 minutes)
2 Tablespoons melted butter
Optional: Chocolate chips, washed and dried blueberries
This mixture SHOULD be lumpy.  Dont over-stir.  Yield: 9 1/3 cup pancakes.

When the pancakes begin to bubble, they are ready to flip!  Caution: if you cook pancakes on high, you will more than likely burn them :).

Homemade Vanilla Pudding:
Caution, this stuff is the BEST pudding you will EVER have.  YOU WILL NEVER HAVE STORE BOUGHT AGAIN.  We started having to make our own pudding because my son has allergies to food coloring.  So a lot of things that we really liked we could no longer have.  Its crazy how many chemicals are put into our foods these days!  So anyway---I tried a lot of recipes and NONE of them are as good as this.  I'm going to make a chocolate one soon and I'll let you know how it turns out :).

    3/4 cup raw sugar
    4 Tablespoons cornstarch
    1/8 teaspoon salt
1 cup cream (You can use all milk, but I like to use at least part cream for the liquid)
    2 1/2 cups milk
    3 egg yolks
    1 tablespoon butter
1 tablespoon vanilla (as always, I use my homemade vanilla ::::licks lips::::)

Combine sugar, salt, and cornstarch in a saucepan.
Whisk in cream, milk, and egg yolks, Cook over medium high heat, stirring constantly for 3-5 minutes or until thickened.
Remove from heat. Stir in vanilla and butter. Whisk until butter is melted.
Strain through a fine mesh sieve to remove any lumps  (if you stir nonstop, this shouldnt happen--or maybe its because I have a REALLY cool whisk?!).
Cover with plastic wrap for storage. To prevent a skin or film from forming be sure to place plastic wrap up against the pudding, not just over the top of the bowl.
Serve warm or cold.  This is AMAZING served with fresh berries :)
Its done when it sets up after stirring.

BONUS:  This is what we had for dinner tonight.  This was something we made in college while I was working at Red Lobster.   Perfect Baked Potatoes.
Baking potatoes do work best for baked potatoes.  Rub them with oil, pierce them and put a little salt on top (we like sea salt, this helps keep the moisture in the potato).  60 minutes at 350 or until pierced w/ fork.  Temp should be 210.  45 mins at 400 works too :).  Be sure to put foil under the potatoes then place them directly on rack.
Ok, here's the special Red Lobsta' style potato we made.  Top with butter, cheese, sour cream, Worcestershire sauce, pico de gallo, and pepper.  OH YEA BABY :).

Tomato Soup

This is the recipe we use instead of canned tomato soup.  Originally the recipe was Nordstroms, but we changed it a bit :).  I try to make a batch big enough to last through the winter.  Its SUPER easy/healthy and oh so tasty with grilled cheese if you need a quick supper (or if you're just in the mood :).

Tomato Veggie Bisque
OO
1 onion  (chopped, sliced or whatever your heart desires)
2 stalks celery (again-chopped sliced whatever)
1 bag small carrots (chopped)
whatever fresh veggies you want to throw in there or have to use
1/2 c fresh basil (wash, squeeze dry, measure THEN chop) OR 1-2 TBSP dried
2 28 oz cans whole tomatoes
1 quart chicken broth (I just use whatever I've boiled down from our last whole chicken)
1/2 pint 1/2 and 1/2 or whipping cream (you can use fat free too), I've never made it w/o the dairy but I'm sure you could try
salt and pepper

Heat OO in a stock pot, adding carrots, celery, and onion until they start to soften.  This is when you'd add your fresh veggies, I've add whatever veggies I need to use (zuchinni, tomato, carrot juice, small bit of greens).  Then, add basil, 1/8 t salt & 1/2 tsp pepper, let the veggies continue to get soft.  That should total about 15 minutes.

Add tomatoes and broth, bring to a boil...then turn med low to simmer about 30 minutes.

Puree w/ an immersion blender, regular blender, or food processor until smooth.  Doing batches if necessary.  BE CAREFUL---soup will be very hot and if put under pressure with too much quantity they WILL explode.   Let cook for an additional 15 minutes.  By the way---did I mention I REALLY REALLY LIKE MY IMMERSION BLENDER?!  So much that I think I might need a new one soon ;).

Stir in the cream over low heat, until it is to the creaminess you prefer.  I let it cool, then I store it in freezer bags flat in the freezer till they are needed :0).  The little guy said I needed to add some 'green stuff' to make it look pretty ;).

Hi Sweet Friends!

I'm so sorry I havent been on and putting up recipes.  Every time I have the urge to---I forget!  I'm going to call it placenta brain :).

I have been on the meals ministry at church and not had a need to cook/prepare anything for quite sometime.  BUT-  NEVER FEAR!  I will be back soon...I plan on getting in the kitchen this morning to make some raspberry and chocolate croissants.  Then again to make tomato soup (we use this throughout the winter instead of canned soup) because it requires fresh basil and my basil will be toast (if it isnt already) because last night we had a frost.  Brr....

I have a good news update for you with baby boy though :)...
He is about 3 lbs which is larger than average for 27 weeks of pregnancy.  THIS is VERY encouraging news, because if there were a clot in my placenta he would be on the smaller side.  The Dr said that he has no reason to believe that in 9 weeks we should be holding a healthy baby boy. ~Tears of JOY and RELIEF~
So I'm going to get some more easy, tasty, and maybe healthy recipes up for you within the next day or two, okies? :0)

Ta ta for now!

Choco-Monkey Oatmeal

Nothing warms me up like some Christmas music and a warm breakfast on a crisp FALL morning! :D
So if you want to enjoy the 2 together as we did, click here:
Country CHRISTmas Music
Ok, so you have that part down----now lets get you some breakfast!

Makes 2 large servings (honestly 4 servings if you dont have huge eaters!):
Boil 2 cups water with a pinch of salt.
When it starts to boil add 1 cup of Old Fashioned Oatmeal.  Turn to low and simmer about 10 minutes.  When the oatmeal is the consistency you like:
Add 1/2 t Butter or 1 t Coconut Oil
About 3 T Maple Syrup
Stir in about 1/2 cup chocolate chips (if you stir too much it will melt it we just like them melty- if that makes sense?)
Put into serving dishes and top with:
1 banana cut into slices

YUMMM!

3 STEP---NO Knead Artisan Bread :)

3 cups All Purpose Flour (can use half wheat flour)
1/4 tsp instant yeast
1 tsp salt
1 1/2 cups tap water
1 Tbsp Rosemary (opt)
1/2 Tbsp Olive Oil (opt)

Put dry indgredients in a large bowl, being sure to have everything mixed evenly (this will make sure your yeast is distributed throughout your dough). Add water and olive oil until blended (the dough will be shaggy).  Cover bowl with plastic wrap, let the dough rest at room temperature for about 12 hours.

Dough is ready when surface is dotted with bubbles. Liberally flour a pastry mat, cleaned/dry counter, or cutting board and place dough on it. Sprinkle top of dough with flour. Pat dough down
until it is about the size of a sheet of paper 8x10. Sprinkle it with a little more flour. Fold one
side of the dough over onto the middle, then repeat with the other side (so you are folding it in thirds). Flatten the dough a bit, then repeat the folding once more. Sprinkle a little flour in your bowl, then return dough to bowl. Cover loosely with plastic wrap and let dough rise at room temperature
for 2 more hours.

One hour and twenty minutes into the 2 hour rising, preheat oven to 450 degrees.
Then place a dutch oven or stone baker (I use my Pampered Chef Deep Covered Baker) with lid in oven for 30 minutes. Using oven mitts, remove the baker from the oven and dump the dough into the baker. Place lid on and return to the oven to bake for 30 minutes. Remove lid (again using oven mitts) and let bread bake another 8-15 minutes until it is golden brown on top. Remove and cool on a rack. If you just can’t wait, eat bread while it is still hot, it’s delicious!

One of our Favorite Quick and Easy Breakfasts ;)

We only get 2 days a week that we are able to eat with Daddy around....so we want it to be special.  Every weekend we have some kind of 'fancy' breakfast.  Besides, I'm *pretty* sure my favorite meal of the day is breakfast.

What do you all these have in common?
Fresh toasted Bagel
Cream Cheese
Fresh Tomatoes
Sliced Red Onions
Arugula
Smoked Salmon
Capers
Salt and pepper
WHY----I'll tell ya!  They only make the BEST BREAKFAST BAGEL BAR AROUND!  Albeit, the salmon and capers are only on there because my Hubby really likes them.

I serve a side of fresh fruit with this and my oh my friends --music to my ears-- I dont hear "I'm hungry" till lunch time!  (PS for those of you who know my boys that is NOT the typical---I usually hear I'm hungry every 1-2 hours esp from the little one).

Hubbys plate typically consists of:
Bagel, cream cheese, salmon, red onion, capers...fruit on the side

This is more like what mine looks like...YUM YUM!  Bagel, cream cheese, red onion, tomato, arugula, salt and pepper.

The little dudes sandwich?  Well, it depends on the day :0)

BON APPETIT!

What is your familys favorite breakfast?  I really enjoy trying new things!!! :)

2 Dipping Oil Recipes and How to Pick a Quality Olive Oil (what I've learned this week)

Our Favorite Dipping Oil:
1/4 c Olive Oil
Pinch of Salt and Cracked Pepper
1 T FRESH Romano cheese
3 t Pampered Chef Sun Dried Tomato Herb Oil Dipping Seasoning
Allow the flavors to get to know one another for a few minutes. :)  Then dip away!

Close 2nd Dipping oil recipe:
1/4 c Olive Oil
1 T salt
1/2 T crushed Red Pepper Flakes
2-3 cloves minced Garlic
1/2 T dried Oregano
1/2 T dried Basil
1 T salt
Cracked Pepper to your liking (I usually use about 1/2 t)
Allow the flavors to get to know one another for a few minutes. :)  Then dip away!

HELPFUL HINT:  If you serve dipping oil on a flat plate, your bread will pick up more flavor :)

Next post, I will share with you our favorite NO KNEAD Artisan Bread recipe.

I dont know about you but I always enjoy learning something new.  Especially when its information that I can put to good use.  I've been researching olive oils because certain ones lately have been making me queasy.  I usually SO very much enjoy olive oil, FRESH Romano cheese, a dash of salt,  and some of my Pampered Chef Sun Dried Tomato rub.  But something about it the other day tasted wrong (I blame it on the pregnancy highly developed senses).  However, upon research....I'm glad I did.  Since the olive oil I still enjoy is Trader Joes, I started there (they have a lot of information on their products online).

"Olive trees have been cultivated widely in the Mediterranean for centuries. References to olives, the tree and the oil, are sprinkled throughout the Bible and other writings from antiquity. At one point it was used as currency. Antiquated vessels that were used to carry the oil and that bear official Roman and Cretan seals have been unearthed in every area of the region. Down through history, the importance of the oil has moved from multi-purpose heating, medicinal and culinary oil, to its current acceptance as one of the best all-around oils for cooking and making salads. Olive oil continues to be highly prized for its flavor, versatility and health benefits.
The "Mediterranean Climate" (warm, sunny days with cool, ocean mist filled nights) produces the perfect growing conditions for olive trees. Although this condition can be found in other places in the world, like the South of France, Turkey, California, Arizona and New Mexico, the most sought after oils are from Italy, Spain and Greece."

Click here to read more about Trader Joes Olive Oil (production, refrigeration, storing, and baking/frying w/ OO)

Although interesting, that didnt tell me how to make sure I'm purchasing the tasty olive oil.  THANK YOU GOOGLE! :)  So I previously thought that 'first cold press' was the best.  Not so....that was important back in the day when olives were crushed with stone wheels to excrete the oils.  Today, all extra virgin olive oil comes from the first press.  So, thereby, 'cold press' is meaningless.
"Cold Pressed Olive Oil: Then and Now"

Additionally, I thought that was interesting that companies could advertise Italian names, does not mean its derived from Italy---check where your olive oil is harvested from.  As with all things (many countries do not have the standards that we have for 'safe food')!

Finally, have you ever looked on the shelves in the supermarket?  The colors vary widely!!  Guess what?!  THAT tells you a LOT about the flavor of the oil.  Bottom line:  a golden olive oil is characteristic of ripe pressed olives (which is where you get that nice buttery flavor).  Green olive oil (the one I thought was bitter) on the other hand, is characteristic of unripe olives and tends to be bitter and sharp tasting.

I hope you found this information as interesting as I did! :)

My Favorite Homemade Cleaning Products Part 2

Thank you so much for visiting me.  I am on bed rest and blog-land occupies my mind, its quite entertaining to me.

I will start with answering the questions I was asked after my last post:
What is your experience with Norwex, by the way, and what have you found to be the best way to make mirrors/windows/glass surfaces spotless?
Actually, I had no idea about Norwex.  I just googled it to find out more about the company.  It looks like it would have a HUGE base market in this area of the country though!  I have a friend who swears by another company called Celadon Road, it seems to be the same type of idea though. :)
My absolute FAVORITE way to clean windows, chrome, mirrors, and stainless steel is VERY simple!  I put rubbing alcohol in a spray bottle and use it as I would windex with a paper towel or old baby diaper.  It gets EVERYTHING off: germs, toothpaste, hairspray, mascara, fingerprints.  NOTE:  I do use the Green Works window spray for quick jobs, not my thorough cleaning though.

Does the detergent work for cloth diapers?
I use a different homemade laundry solution for cloth diapers (CD).  I have heard that the Borax does something to the pul in the CDs.  My hubby and our friends laugh at me for what I'm about to tell you I use as soap for the CDs.  I use soapnuts, yes, soapNUTs!  http://www.naturoli.com/  Its very simple, and I've had the same large box since we started using cloth over 4 years ago.  All you do is simply put about 7-9 soap nuts in a pot of water, bring to a boil, and let it simmer until the nuts are soft (about 20 minutes).  I allow it to cool then put it in the fridge to store.  I use about 1/2-1 cup of the soap nut detergent to wash.  To care for my cloth I do one cold rinse load with baking soda, a hot wash load with soap nut detergent, and an extra rinse load.  I have NEVER had stinky problems or rashes since I switched to using these nuts as my detergent.  I stripped the diapers from my old detergent, washed them in the soap nuts, and haven't turned back!  :)

Something I forgot to mention in my last post.  I write the recipes of all my homemade cleaning goods on the containers so when I'm out of it I can simply throw it together.
Wood Cleaner/Air Freshener:
THIS is my favorite, I use it probably daily!
Water
7 drops lavender oil
7 drops lemon oil
I keep this in an 8 oz spray bottle and spray it every night before bed, it can also be used as "Pledge."  I use it on our wood staircase and it seems to repel dust (in an old house---thats saying a lot)!

All Purpose Cleaner:
I will put a disclaimer on this saying I JUST switched over from Mrs. Meyers and making my own.  SO FAR--I have no qualms with this new recipe.
 2 T White Vinegar
 Hot water
2 drops of Dawn dish soap
10 drops lavender oil (while optional, makes it smell pleasant while cleaning)
1 t Borax
I put the hot water to the neck in a 16 oz spray bottle, add vinegar and borax.  Mix until the borax is dissolved.  Add your drops of Dawn and essential oil.  Fill the remaining amount of the bottle w/ water.

Powdered Dish-Washer Detergent:
This does get moist, so it ends up more like a paste.  I sure if you put a few silica gel packs in it, it will keep it from doing that.  However, I dont keep them on hand.  I had tried 2 or 3 recipes for dish detergent and was about to give up on them, then I found this one on Pinterest.  PINTEREST SAVED THE DAY!!
1 c Borax
1 c Washing Soda
1/2 c LemiShine
1/2 c Salt
I used a Citrucel container and the scoop that comes in it, and its the most wonderful size for this recipe.

Baby Shampoo:
This is more watery than your run of the mill 'shampoo', however using the same amount it lathers just as much--if not more!
12 oz distilled water
Lavender oil
Chamomile oil
4 T grated Castile soap flakes
Bring the water to a boil, turn off the burner and allow it to cool for a few minutes.  Add Castile flakes, stir till dissolved, add 5 drops of Lavender oil, 3 drops Chamomile oil.  Our little man ADORES this soap.  Ever since we started using it he doesnt want help washing :p.  Boo for our babies growing up!

Baby Wipes:
Our whole family uses these as baby wipes/cottonelle wipes.  DO NOT FLUSH.  This is wonderful for babies because its gentle, antibacterial, moisturizing, and one of my faves CHEAP!  First I had to find a baby wipe container that would suit my purposes, I ended up finding these at CVS http://www.cvs.com/shop/product-detail/Just-The-Basics-Baby-Wipes-Lightly-Scented?skuId=822467 .  FYI If I were getting these just for the wipes, I would never buy them again.  They are NOT soft, dont hold moisture very well, and you need to use a few for them to do the job.  However since I was just using their packaging I didnt care :).
 1 paper towel roll
2 c hot, but not boiling H2O
3 drops Tea Tree Oil
3 drop Lavender Oil
2 squirts baby shampoo
1 T Coconut Oil
Ok, first cut your roll of paper towels in half with a sharp knife (or your hubbys saw, te he ;).  For the record-and those of you who know my hubby---I'm not saying I did that ;0)!  Stuff 1/2 your roll of paper towels in the container, set aside.  Mix all remaining ingredients until combined and pour into the paper towel roll.  Allow it to soak for a few minutes and the tube in the middle of the paper towels will just come right out!

Homemade Bug Spray:
I havent been using this but my boys have.  This is NOT to be used on pregnant women.  As with all bug sprays, it should be wiped off your skin when you come inside.  It works VERY well!  This may totally be a cop out, but I use someone elses EXACT recipe so I'm going to post her website: http://www.icanteachmychild.com/2011/06/make-it-natural-mosquito-spray/

Thats all I can think of right now......when I think of more---you know where I'll be!

My Favorite Homemade Cleaning Items Part 1

So about 2 years ago, our son had a HORRIBLE asthma year.  He had always had breathing issues in the fall/winter, but he ended up in the ER a few times 2 years ago and I was desperate for my baby to be able to breathe.  Prior to making my own I shopped sales, stocked up, and clipped coupons for cleaners.  Little did I know that I was aggravating my little guys lungs by exposing them to chemicals.  So began my quest for getting rid of everything aerosol in the house, using natural cleaners, and making my own of everything I can.  At first, I thought "aww man, like I need one more things to do."  But fast-forward a few years....I feel better (physically), I enjoy making it and knowing what my family is being exposed to, and its much cheaper!  Oh and PS: I'm still clean ;).

I dont think I can possibly tell you everything in one post since we make almost everything now. However, I will share with you all you need for laundry this time :).

Dry Laundry Soap
I make 2 batches of this at a time using each a bar of Kirks Castile Bar Soap and Fels Naptha.
1 bar Fels Naptha or Castille Soap
1 cup Arm & Hammer Washing soda
1 cup Borax
1/2 cup baking soda
Grate the bar soap as small as you can using a fine grater (I use the food processor shredding and chopping).  If you dont have anything to get it really small, after grating, you can use a knife to cut it up more.  Mix in all ingredients, cover and shake.  Or if you are using the food processor just put them all in there and pulse it a few times.  I use 2T of this for a medium load and 3T for a large or soiled load.
I used to make liquid soap, but it makes WAY too much and this is just as efficient and takes up less space.

Home-made OxyClean
1 cup H2O
1/2 hydrogen peroxide
1/2 cup baking soda
I put this in a load that needs some special attention

Liquid Fabric Softener
6 c H2O
3 c white vinegar
2 c natural hair conditioner (I use Trader Joes Tea Tree Conditioner)
Mix or shake all ingredients.  Use the same amount you would for any other fabric softener.

Scrubbing tubs:  Washing Soda
Cleaning potties: Vinegar and Baking soda---it works like a charm!!!

Tune in next time: for homemade disinfecting wipes, baby wipes, baby shampoo, hand soap, and more!
Ok, its nap time 'round these parts.... :).

Lil bit O' Thanksgiving in the Summer!

Poke Chops and Stuffin' (said in a country girl accent :)!  YUMMMM....this is BY FAR one of my FAVORITE Fall/Winter meals!  Its a family recipe that I inherited from my Aunt.  Am I even allowed to post family recipes?  Shhh!  By the time I thought to get the camera out all that was left was this one lone chop---its meant to be part of my Hunnys lunch (we'll see if it lasts!).

4 pork chops (boneless, 3/4-1 in thick)        1/4C water
3C soft bread cubes            ¼ tsp. Poultry seasoning
2 tbsp. Chopped onions            1 can condensed cream mushroom soup (undiluted)
1/4C melted butter or margarine

Brown pork chops on both sides; lightly coat baking dish with oil, place chops in baking dish.  Mix all other ingredients in separate in bowl.  Place a mound of stuffing mixture on each chop.  Bake in 350° oven for 1 hour or until chops are tender. Yeild: 4 servings.

Remember....its our little secret ;)!   I dont think she'll mind----she says herself that good recipes are meant to be shared!

To 'TOP' off yesterdays post!

Homemade Whipping Cream:

FIRST--lets look at the ingredients in the frozen stuff you get at the store:
water, hydrogenated vegetable oil (we dont touch hydrogenated ANYTHING...BAD stuff!  If you are interested google: whats wrong with hydrogenation?  The short of it is it can cause many health problems and diseases), high fructose corn syrup (man made chemical structure to replace sugar that doesnt spoil as fast---supposedly contributed to obesity in America), corn syrup, skim milk, light cream, sodium caseinate (again a chemical-can cause high blood pressure and kidney failure), natural and artificial flavor, xanthan and guar gum, polysorbate 60 (chemical), and sorbitan monostearate.  I dont know about you, but there are a lot of things in there I DON'T feed my family.

OK, with that in mind....lets talk about how to make your OWN whipping cream.  Done in less than 5-10 minutes, with no chemicals, and all the calcium and protein (others too I'm sure), and only 2 ingredients!

Ingredients:
Whipping Cream
2-3 T sugar (we use unbleached because the chlorinated bleaching process takes nutrients out of the sugar).
1/2 t any kind of extract (if desired)

Tools:
Mixing bowl
Electric beater

Stick your beaters, whipping cream, and mixing bowl in the freezer for just about 10 minutes.  Take them out and use the ratio 1 cup whipping cream to 2 Tbsp sugar to start with (can sweeten to your liking).  Beat whipping cream and sugar until stiff peaks form (do not over beat because it will turn to a sweet butter).  If you are using extract, add the extract and give the beaters another whirl or two (just enough to mix in).  You can store this in the fridge covered for a few hours.  If, when you take it out of the fridge its soft, just re-beat it.  I usually put it in a container to freeze and it will keep about a month.

For a delish chocolate light fluffy dessert add cocoa when you are beating :).  You can also add other spices to your liking.  Over pumpkin pie, a bit of cloves and/or nutmeg is great!  As you can tell by the title of this post, I like it over my chocolate milk :).

SO BEGINS A NEW CHAPTER!

Currently, I am 18 weeks pregnant and PRAISE GOD.  Everything looks wonderful with the baby!  I have my anatomy scan on Thursday.  I am currently on light bed-rest because I started having stress induced contractions, then they continued to get worse...so no stairs, no lifting, no bending over, no stress.  So long as I have followed my Drs orders, I haven't had any additional problems.

SO...the reason I'm writing this is because I'd like to take a new direction with my blog.  Homemaking.  I'm VERY passionate about the health of my family, what we put in our bodies, and doing it in a frugal way...subsequently I end up making a LOT from scratch.  A friend told me I should start a blog about it...and so I am :).

I'll start with a child and family staple around here.  CHOCOLATE SYRUP!  We really enjoy it on ice cream, cheesecake, strawberries,...but my personal favorite right now is CHOCOLATE MILK (it makes really good hot chocolate too)! :)

This recipe is from The Complete Tightwad Gazette

½ cup cocoa powder
1 cup water
2 cups sugar
⅛ teaspoon salt
¼ teaspoon vanilla

Mix the cocoa powder and the water in a saucepan. Heat and stir to dissolve the cocoa. Add the sugar, stir to dissolve. Boil 3 minutes over medium heat (be mindful not to let it boil over).  Stir in the salt and the vanilla. Let cool. Pour into a clean container, and store in the refrigerator. Keeps for several months (it wont last that long though ;)
Yield: 2 cups

VIOLA!  I promise you will NEVER go back to store bought chocolate syrup again!!  Its cheap, easy, and the natural antioxidants from the cocoa powder is a plus.  If you are like us, it also keeps you away from the high fructose corn syrup from most store bought syrups (unless you are buying organic).

Additionally, I do make my own vanilla...you can find the recipe in this old post: http://soblessed2be.blogspot.com/2011/08/super-easy-and-wonderfully-cheap.html

Things are not as they seem....

Hang on till the end...there is a point to my rambling.  :)

So many of you who have followed our story know how tough its been over these past few years.  The loss of our children, the loss of friends, the loss of my father, and my continuing health obstacle.  I'm just going to be real here, and I hope that you are brave enough to be real with me and others around you too.

So to many...who see us on a day to day basis, think our families lives are perfect.  We are happily married, we have a wonderful little miracle of a boy, and we arent in need of food or shelter.  I would like to share with you some things that we do deal with (and sometimes struggle with) on a day to day basis:

I deal with fatigue and pain on and off and there is no way to know when it will happen.  I think of my husband and how he has concern for me daily when he calls to see how I am...I cant imagine the helplessness of someone who he loves so much and not be able to help her.  He knows that any day his wife could leave this earth because of her blood clotting disorder.

Most days I feel to weak to do the things that need done around the house.  Its true (contrary to popular belief)--before people come over to my house we all go crazy cleaning before company arrives.  The truth is, as hubby puts it, our house is "lived in".  Its not tidy nor is it perfectly clean 90% of the time.

Our marriage hasnt always been happy.  After my loving husband came back from war there was a very tumultuous time in our marriage.  The "d" word was tossed around way to freely, words were said that shouldn't have been said, and from time to time hands were thrown that had no business leaving our sides.  War changes who people are, I truly think that there isnt enough respect or support for military men and families.  This lasted for about 5 months after he got home.  When we lost Avery there was a very very dark place I was in...I felt like I didnt have my husband to share how I felt bc he was incapable of feeling (from PTSD).  I had just lost our baby and I felt like he didnt care.  I found myself in the bottom of an abyss and I felt there was nobody that threw me a rope or offer me a way out.  Thankfully, I had hope...I knew that she was with Christ.  Truly I tell you my 2 year old son was my biggest support that I had.  He offered me drinks, he fed me, he rubbed my back, and he held my face gave me a kiss and told me I was beautiful.  He got me out of bed (do you see more why he is such a miracle?).  Then when we lost our second baby, Levi....I remember laying on the bed thinking this cant possibly be happening.  Lightning doesnt strike twice does it?  I was so broken that I was numb....I felt like a failure to my husband for being incapable of holding a healthy baby, and to my son because he was so much looking forward to hold the baby that he constantly kissed in my belly.  It was after I had our second loss that I reached out for help from who is now my mentor.  By Gods grace, she helped me deal with the emotions that I had, the fears that I had, and the brokenness that she understood from her own loss.  We went through a book called "Trusting God Even When Life Hurts", by Jerry Bridges.  When we first started reading it I could tell the book was all about Gods sovereignty and I felt like this was a book that I would learn nothing from.  Boy was I wrong, through that study and the Isaiah study I was studying in BSF God showed me how absolutely in control of everything he was.  My life started getting pieced back together and I didnt feel abandoned.  My sweet friend and sister was there at my beck and call...the role she played and the care she took in my life means more than she will ever know.  When we got pregnant again (believe me we werent trying) I was so scared....I lived through the pregnancy trying to enjoy every moment because I know that 'today' might be the last day.  I pushed past the fear and constantly reminded myself how very much in control of my life and the baby inside of me God was.  When we lost Skyler, I truly realized what the peace that surpasses all understanding it.  I dont know how, but I didnt break.  I felt at peace.  My husband didnt, he was feeling everything I was feeling the first time we lost our baby.  The Lord allowed me to encourage him and be his helpmate.  What a beautiful thing that a strand of 3 cords is not easily broken.  Shortly after we lost our last I started having health problems where I was fainting, getting dizzy, having major migraines, along with a slough of other things that I wont share here.  I've fought blood clots almost monthly from driving too far, had a TIA, and felt the chronic fatigue and pain on and off and I didnt know why.  The Lord is in our story and I know that each and every day that our babies are at peace.  I dont think if I could write history I would have written the same story...but I tell you what, its a glorious thing that God is in control and we are not!  I'm here to tell you that our marriage is a COMPLETELY different marriage than it was before.  My husband is truly is my best friend, I look at him and I adore him, I respect him, and I dont know what I would do without him. With God ALL things are possible!

OK....so what was my point of telling you this whole story?  Life sometimes falls down around us.  Death of a loved one, loss of a job, or a unexpected turn in life.  These are things we all deal with, many of us are in that place right now.  However, God has orchestrated it for a reason.  There is nothing...and I mean NOTHING that hasnt been handed to us that hasnt been handed to us by our Creator.  Let us help and encourage the ones we love.  Truly love them and be with them when they are hurting.  If you say you are going to pray for them, really do it.  If you dont understand what they are feeling, try to.  Lastly, if you have an opportunity to serve them..please do, you dont know what it means to find encouragement until you are the one who really needs it.

If you are that person in a dark place: dont be afraid to ask for help, seek God....He is the ONLY one who can mend our broken hearts.  Christ had his arms stretched out on the cross with you in mind.  He loves you so much that He gave His life.  Would the King of Heaven and Earth do that if you werent worth it?   There was a time in life when I was 'normal' and 'healthy' and I wish I knew then what I know now.  So I pray that by reading this, somehow...you are encouraged.

Food therapy.....

These are the best breakfast muffins I've EVER had!  I mean like they taste better than fresh doughnuts!!  Although make sure you have a crowd bc they are best fresh!  Maybe you could make them, freeze them, and re-bake them?  Let me know if you do and what you think!

Doughnut Muffins
1/3 c. butter, melted
1/2 c. sugar
1 egg (preferably room temperature)
1 1/2 c. all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 c. milk

The Delish part:

1/2 c. sugar
1/2 c. butter, melted
1 tsp. cinnamon

Preheat oven to 350F.

In a medium-large bowl, sift together (Tip: I use a whisk and beat them dry) all dry ingredients. Add wet ingredients and stir until combined, but still a bit lumpy. Don't over mix. Scoop batter into nonstick pan.  Bake for 20-25 minutes, or until golden at the edges.

For the topping, mix sugar and cinnamon in a small bowl. Place melted butter in another small bowl. Dip the warm muffin tops in melted butter, then dip/roll the muffin in cinnamon sugar.

You will probably have leftover cinnamon sugar...why not serve apples cut up w/ cinnamon sugar? :0)

Some things people say

My thought earlier today:  if someone says "at least you dont have to deal with (insert childhood obstacle) one more time I'm going to kirk out on them!"  I didnt say anything and just changed the subject.  I have been told this many times...truly I think it is absolutely positively insensitive (obviously I've been stewing about it).  Usually, it just hurts my feelings but today it made me angry.  I just wanted to say "really?  Would you rather be in the situation I am in?"  I had to work through this and bring it back to love because I didnt feel like loving!  First, I had to think of Gods grace....His GREAT grace (:::singing:::Grace, grace, Gods grace, a grace that is greater than all our sin").  How many times have I done, said (or not said for that matter) something that has hurt God in that way.  Thousands of times.  Then I thought of a way to encourage someone if I am told that again (I'm sure it will happen!).

I continued to break this apart to challenge myself with my parenting of our little dude.  Sometimes having young children is really challenging.  Many times we have to give up something because of little people (sleep and the freedom to be flexible come to mind).  However what we are temporarily putting aside is nothing to what we get in return---the jewel of the love of our children.  I'd give everything to know that I am taking care of my son well.  How precious is our task at parents!   I pray that I may be found as a good steward in raising my son as a God-fearing and loving man!!  Children are a gift from the Lord!

Just my two cents :).

Now what you've all been waiting for--- the adoption update:
We have a home inspection scheduled for the end of the month and we are busy getting ready for it!  :0)

Maybe a health update too?
I have FINALLY been diagnosed with Antiphospholipid Syndrome (APS or Hughes Disease) http://www.hughes-syndrome.org/symptoms.htm .  This is the same diagnosis I have been fighting for 2 YEARS to get a diagnosis.  Sadly, every time I was tested it came back positive but I suppose the Drs who looked over the numbers arent familiar with it (really--they looked up info on the internet for it).  Even sadder---I was tested while I was pregnant and had I been on heparin injections the chances of the babies living go from 15% to 80%. God was sovereign over all that too. He has been SO gracious in giving me what I need and teaching me more about Himself all along the way ♥.  I AM SOOOO SOOO THANKFUL FOR OUR SON!!!  Treatment---prayer and blood thinners (although prayerfully asprin will take care of it and I wont need more serious blood thinners).

Many blessings my friends!

YAHTZEE! :0)

Went to the meeting...

Wait time is up to 3 years.  Although with this agency the parents go into a pool so its a matter of being matched up with the right birth mother...so it could be MUCH quicker.

The domestic adoption director said that we have A LOT of things going for us and working in our favor.  So we are praying that the Lord would see fit to make that 3 years turn into something more like 3-9 months :0).

Praise God....we are so excited.

Now to get my messy house ready for inspection.  Ok, really time to turn my office back into a nursery.  We have a list an entire page full of size 8 font things to do before our case study can begin.

One Step Closer....

God has been preparing and paving the road for us every step of the way! This week we have our adoption intake meeting!!  I can honestly tell you that last week we werent prepared for this meeting financially...after this meeting we will pay the $2300 for the case study.  Well again, God supplied our need.  A family from church gifted us the last $500 we needed for that $2300!!  Now really?!  How exciting is that?  God has been meeting all of our needs in the most random of ways.  Praise God from whom all blessings flow.

I'll update you after the meeting! :0)

All about adoption....prayer request :)

First...we want to thank EACH and EVERY one of our beloved brothers and sisters for walking through these past few years with us.  For supporting us with love, prayer, meals, notes of encouragement, scripture references, and hospitality through what has undoubtedly been some of the most trying years of our lives.  God has been so gracious to our family by blessing us with such a loving body of believers, we have truly felt the prayers and love of Christ through you.

Update....starting to write is a lovely place, yes? :)

So, we have been going to the Drs so frequently over the past few months that its nauseating to think about.  Every test has come back within a normal range.  So anyhow, seeing as we have had 3 stillborns in the last 2 years and we have no further information.....we have decided to go a different route for now.

We have ALWAYS had a heart for adoption, we've always known we wanted to adopt.  We just thought it would be after we were finished having our biological children.  The Lord has greatly impressed in us both all of our lives the importance and beauty of adoption.  One of Nyes best friends growing up was adopted and my bio sister was actually put up for adoption.  Most beautifully, our Great God adopted us into His own family and has called us from the life of sin and wretchedness that we once lived.  We have been praying for a while about the Lords will in timing for us to grow our family in such a beautiful way.
Side story:  last year after we lost our last baby girl (Skyler)...I would not think of getting pregnant again, so I started scrambling around trying to find a way for us to save for adoption.  Sometime this past fall, I grew frustrated with the living paycheck to paycheck and not being able to save, so I said 'ok God, I'm not meddling in this any more...we'll just wait for your direction' (THIS should have been the starting point).  I just started being more diligent on praying about it and that God would direct my wonderful Husband in which way He would have us go.  So just before Christmas Hubbs said after his quiet time one day "you know...I think we should just go ahead and put in the application and trust God to supply all our needs as we need them."  I was so amazed that as quickly as I relinquished my power over the situation the Lord was so quick to answer my prayer.  I needed that lesson.  In the big things and in the small things of life, submission is really where we always ought to start.

SO HERE IS THE BIG NEWS:  Last night we went to a meeting at an adoption agency and we are more excited than EVER to welcome whomever the Lord wants to bless our family with.  We were surprised to learn that placement 'can' be as quick as 2 MONTHS!!  Basically we have to do our home study, submit it...meet with a case worker and then we are put in with a 'pool' of parents waiting for babies.  The birth mothers look at family profiles that match their desires for a family and choose a family to parent their baby.  Here is the catch:  the cost of the services are due at the time the service is rendered.  We are thankful that this adoption agency works on a sliding scale so it makes adoption much more attainable.  However, living on one income and in the area we live in we are still wondering where the money will come from. We have researched a few Christian agencies that we plan on pursuing a grant where they match $ for $ the donations on our behalf.  Although, we dont know if the time frame for the adoption and grant will coincide.  We can apply for the grant program after Feb 1 AND when we have our home study done.  We have an inquiry in with another grant agency that hasnt gotten back with us yet.  We will keep you updated as we continue in this journey.

This is what we KNOW:  that God is bigger than any amount of money...that He has led us to this place...and that He will supply our every need.  We just dont know what is between A and Z, and how the Lord wants us to get there. <3

We would like to ask for a commitment of prayer for guidance in all areas of this beautiful process.  We THANK YOU FROM THE BOTTOM OF OUR HEARTS in advance, for you are such an important part of the work that the Lord is doing.

Please feel free to comment and share with us in our joy!  Have experience with adoption?  Have wisdom for us?  Are you adopting too?  Please let me know so we can also be in prayer for you.
